Cornmeal Pie Crust

  • 3/4 cup unbleached flour
  • 1 1/2 teaspoons yellow cornmeal
  • 4 tablespoons (half a stick) chilled, cubed, unsalted butter
  • 2 tablespoons + 2 teaspoons very cold water

Combine flour, cornmeal and butter processing in a food processor until the mixture resembles coarse meal. With the food processor on, slowly pour in the water until dough forms one mass.

Remove from processor, wrap in plastic and chill for 30 minutes.

375 for 10 minutes if you wish to pre bake the shell.

Makes enough for 1 two crust pie.
