Sweet potato chickpea curry soup

George made this out of the pantry tonight. It was really good.

Saute an onion, jarred red peppers

Add two cans chicken broth, a cut up raw sweet potato and 3 carrots.

Cook until the vegetables are soft.  Process with a hand held blender (he left some of the vegetables chunked). Add curry seasoning, granulated ginger and garlic to taste and salt/pepper if necessary.

Add a can of rinsed drained chick peas and half a can of coconut milk and let it heat through on low heat.
