Carrot Ginger Soup

Saute chopped onion and sliced carrots (in coins) in extra virgin olive oil until soft. In the Vitamix, blend a small handful of raw cashews in about a cup of water to make cashew milk. Add the carrots, onions, salt, pepper, 1/4 teaspoon ground ginger and 1/8 teaspoon tumeric to the blender. Blend then put back on the stove to warm.
