Beef Stew – George’s IP version

  • 2 pounds beef stew meat
  • 2 tablespoons butter
  • 2 onions, chopped
  • 4 mushrooms
  • 10 cloves of garlic
  • 1 bay leaf
  • canned roasted red pepper (1 whole pepper)
  • 2 cups raw baby carrots
  • 4 red potatoes, quartered
  • 1 cup chicken broth
  • salt and pepper to taste

Saute the meat in the Instant Pot using butter in two batches. Remove the meat. Saute the onions; toss in the mushrooms, garlic, red pepper, 1 cup of carrots, 2 of the potatoes, bay leaf. Add the meat back into the pot. Add 1 cup of chicken stock. Season with salt and pepper. Cook on stew setting for 35 minutes. Quick release. Add the remaining carrots and potatoes and cook for another 7 minutes on the soup setting. NPR.
