We’ve made this pie several times and enjoyed it very much. It snowed today and a pie sounds good. I’m going to make it without sugar and I’ll report back with results later.

- 3 cups mashed sweet potatoes
- 2 cups sugar (I know I’ll use less)
- 6 large eggs
- 1 1/2 teaspoons cinnamon
- 1/2 teaspoon grated nutmeg
- 1/2 teaspoon salt
- 1 stick butter, softened
- 1 can evaporated milk (Pet is her brand)
- 1 1/2 teaspoon vanilla
- 1 pie crust
Heat oven to 350. Roast the sweet potato until done. Mash and measure out the 3 cups. Beat it with the rest of the ingredients and pour into the pie shell.
Bake at 350 for 10 minutes then reduce heat to 300.and bake 45-50 minutes longer until the filling is set.
