Our newest chili

Start by making black beans in the Instant Pot …

2 cups dried black beans
8 cups water

Set the pot to “beans/chili” and walk away for about 2 hours.

After the beans are ready,

1/2 pound browned ground beef
1 onion, diced
4 large cloves garlic, chopped
2 cans diced tomatoes
2 tablespoons tomato paste
1 can Rotel (original)
1 teaspoon chili powder
cumin (to taste)
2 cups of cooked black beans (include the bean broth)

Add the onions after browning the ground beef cooking till translucent. Add the garlic then deglaze the pan with the tomato juice. Add the rest of the ingredients
and heat through.

Serve with thinly sliced raw cabbage, diced avocado, crushed corn chips, cilantro and cheese if you like.
