Paleo Pecan Sandies

More on this later as George works to perfet a recipe with no sweetener at all. The first batch was promising but the cookies barely hold together. They tasted amazing.

Update: Today, George made his third batch having tried several adaptations. While they baked, I was in another room. “Oh no!” I thought. “He’s making waffles – they smell amazing – I don’t dare eat waffles!!”

He wasn’t making waffles at all.

Here’s his recipe:

1 cup almond flour
1 cup ground pecans
1 egg white, beaten
1/2 teaspoon vanilla
1/4 teaspoon salt
3 tablespoons melted butter

Form into balls and press each one into the shape of a flat disk. Press a pecan half on top of each disk. Bake at 375 convection for 14 minutes. This made about 15 sandies.

George bakes them on top of parchment paper on the baking sheet and lets them cool before eating.
