Modifying for the Instant Pot (and brown rice) …
Cook a Costco rotisserie chicken with 6 cups of water and a teaspoon or two of Red Boat fish sauce on “Soup” for 30 minutes. Be sure to include all the drippings in the bottom of the container. Strain the broth and put the chicken in a separate bowl. Remove the meat and chop it for the soup.
Cook two cups of brown rice with 2 1/2 cups water using “Multigrain” for 22 minutes, 15 NPR (it will be al dente).
Remove the rice and proceed with the recipe using the “Sautee” function on the IP. Substitute a bit of cayenne for the paprika.
Once it’s all together, process on “Soup” for about 2 minutes. It’s going to be good!
