I have never enjoyed making or eating beef stew. The stew I made never had a good flavor and the potatoes always seemed sodden and unappetizing.
(Paul on the other hand made a great slow cooker stew when he was 9. He dumped stew meat in a crock pot, added a bag of frozen stew veggies and poured a jar of pizza sauce over it all. It cooked all day on low and was really good.)
George requested beef stew when we ordered the Instant Pot and I felt like I had to at least try. It came out amazing. The potatoes were creamy with the best flavor and the meat melted in your mouth. Here’s what I did:
Set the Instant Pot to “Sautee”. Cook a roughly chopped onion in a little bacon grease until it’s softened. Add about a pound of grass fed stew meat and sautee. After the meat has browned, put the lid on, select “Meat” and adjust the time for 25 minutes.
While that’s cooking peel and quarter 4 potatoes. Peel and trim 2 large carrots. After the Instant Pot finishes the meat and cools down for 15 minutes, remove the lid and add the potatoes. Place the whole carrots in last on top. Add a little salt, pepper and one or two bay leaves. Replace the lid, select “Stew” and cook for 7 minutes. Let the pressure release naturally for 15 minutes. Remove the lid and cut the carrot up. Lightly stir and dinner is ready.
