Soak beans over night. Black beans work best but we are trying to eat more aduzki beans so that’s what I used here.
Remove the lid and set the Instant Pot to “Sautee”. Cook a chopped onion in a little bacon grease or olive oil. Add 2 cups of soaked beans, 4 cups broth, 1 T cumin, 1 teaspoon oregano and cayenne pepper to taste. Salt and pepper to taste.
Replace the lid and set the pot to “Soup” for 7 minutes, 15 NPR.
Add fresh chopped cilantro before serving.
