Thanksgiving Dinner

Menu

  • Roast turkey
  • Gravy
  • Cornbread dressing
  • Stuffing
  • Green beans
  • Roasted Brussels sprouts w/ bacon
  • Roasted mashed sweet potatoes
  • Creamed potatoes
  • Cranberry sauce
  • Homemade rolls
  • Pumpkin pie with whipped cream
  • White wine,  iced tea, lemonade, Diet Coke, bottled water, Virgils Zero root beer, craft beer, coffee

 

The week before:

Order an organic turkey from Earth Fare or get a frozen turkey (we learned after the fact this year that Costco is selling turkeys that are antibiotic-free, hormone-free, etc.) in time to thaw it for several days in the fridge. Also order firewood. Make sure I have waxed paper for rolling out the pie crust.

 

Night before:

  • roast a chicken to give us drippings to make gravy and to provide meat for the cornbread dressing.
  • make the gravy and refrigerate
  • make cornbread
  • assemble cornbread dressing
  • make broth from the roast chicken carcass
  • bake the pies
  • line up all serving platters and bowls on breakfast table with serving utensils; put a note on each one to keep everything straight
  • gather greenery and candles for the table
  • make place cards if guests are coming
  • get the buffet ready for serving
  • read the turkey instructions and verify the turkey start time
  • make sure all the drinks are chilling

 

Thanksgiving Day (dinner at 3 pm)

  • 10:00 green beans in crockpot
  • set the table
  • make sure all the drinks are chilling
  • start dough for the rolls
  • 11:30 clean & prep the turkey
  • 12:00 turkey in oven
  • peel and cube potatoes
  • prep Brussels sprouts
  • heat broth
  • put butter, salt and pepper on the table
  • make small plates of pickles and olives; set on table
  • put cranberry sauce in serving bowl and put on table
  • 12:30 punch dough and start rolls on second rise
  • roast sweet potatoes
  • make the stuffing (chop onions & celery, toss with Pepperidge Farm mix and steaming broth)
  • 1:30 shape rolls and let rise;  check sweet potatoes – keep warm once they come out of the oven
  • 2:25 brush rolls with egg wash
  • 2:30 turkey comes out of the oven to rest
  • rolls and dressing go into the oven
  • Brussels sprouts cook w/ bacon
  • cook & mash potatoes
  • puree sweet potatoes
  • put green beans in serving dish,
  • put dressing and stuffing on buffet
  • heat gravy
  • mash the potatoes;
  • put the rest of the food including the rolls on the buffet
  • 3:00 dinner is served

 

After dinner

  • whip cream for the pies
  • make coffee
