Beth’s oyster stew

Beth is Ivey’s mom and we first met her at Ivey’s baby shower for Banks. I liked her from the start and we’ve gotten to know each other better over the years. She and Ivey have shared some of their family’s holiday meal traditions.

We always get together on Christmas Eve and oyster stew was one of their family traditions. This is Beth’s mother’s recipe from south Georgia:

  • 1 onion, diced
  • 2 tablespoons butter
  • 2 tablespoons flour
  • milk
  • 2 pints raw oysters plus the liquid
  • salt
  • fresh ground pepper
  • Cook the onion in the butter until soft. Add the oysters cooking lightly until the edges curl. Add the flour and stir making a roux. Add the milk – a little at first to make a cream sauce and then more until it’s the consistency of soup.

    Add the oyster liquid and cook on low – barely at a simmer so that the milk doesn’t curdle.

    Finish by seasoning with salt and pepper.
