Jon stayed with us for the past two months or so as he readied everything to move to Seattle. He left today with Cat (Josh’s sister) and they are each driving their own vehicle across the country heading first to Boulder, Colorado.
An easy meal that he fixed for all of us was something I wish we had named! (He did name a sauce he made to go with beef made by mixing horseradish, Dijon mustard and Vegennaise – that one is named De-Jon-aise ha ha!!)
Anyway he likes to grill chicken breasts (but he also will use leftover roast chicken for this too).
He cuts the meat and piles it into big bowls with the following:
- torn greens
- avocado chunks
- fresh salsa
- fresh pineapple chunks
- black beans
I like to add extra cilantro to mine (the salsa has cilantro) and chopped green onion. It’s a fresh take especially on using leftover chicken (but way yummier when you grill chicken right before tossing it in with the other ingredients.
