Carmen’s Cornbread Sticks

I’m at Carmen’s house by the beach and she’s cooking some amazing food.

Here’s the way she makes cornbread sticks (and this recipe can also be baked in a regular cast iron skillet too).

  • 1 cup cornmeal
  • 1 tsp. salt
  • 1/2 tsp. baking soda
  • 1 can cream corn
  • 2 eggs
  • 1/2 cup milk
  • 1 onion, chopped
  • 3 jalapenos, diced
  • 1/4 cup vegetable oil

Brush oil on the cast iron corn stick pan. Preheat oven and pan to 450. Mix all ingredients (except the oil). Bake for 15-20 minutes (20-25 minutes if making cornbread in a regular skillet).
