This was amazing (everything we’ve tried from Nom Nom has been amazing but I admit I haven’t made any of her goat recipes yet).
I didn’t nuke the cauliflower. I just rough chopped it, threw it into the food processor, pulsed it as she describes and then tossed it into the pan with the other ingredients. I left out the bacon (George and I try to avoid pork) and I tossed in the scallions after I served up the dish. The flavor is absolutely delicious.
You could use the cauliflower as rice in your own favorite fried rice recipe. It boosts your veggie intake and cuts carbs. You’ll never miss the white rice.
