Spinach tortellini soup

We found this in Fine Cooking (I think).  It’s just a quick soup to make that’s especially good if you’re coming down with a cold.  It’s fast to make but full of garlic and tomato to help fight off colds and flu.

I just dump chicken broth, canned organic diced tomato, chopped fresh garlic and a little good quality extra virgin olive oil into a saucepan.  I add fresh or frozen spinach at the end and top with a little fresh chopped basil.  Add salt & pepper to taste.  A sprinkle of cayenne pepper or chili flakes would be good too.

If you add tortellini, buy fresh and toss it in after the broth comes to a boil.  Let it cook for about 3 minutes and the soup is ready to serve.

I keep organic chicken broth and organic diced tomatoes (both from Costco) in the pantry all the time.  I also like to buy the huge bags of fresh spinach from Costco.  We make smoothies when we get home and I wash and spin dry the rest of it.  I put it into gallon zip lock bags and throw them in the freezer.  I usually get at least 3 or 4 bags of frozen spinach from the haul.  The frozen spinach works well straight from the freezer in smoothies, added to soups and cooked up as a side dish.
