This is loosely adapted from Nom Nom Paleo.
Saute onions and protein (tofu would work too) of your choice. Throw in any cut up raw veggies and stir fry quickly.
Top with a can of coconut milk (I check the label to make sure it’s not full of artificial thickeners or just make it myself in the Vitamix). I sprinkle it with fiery hot Indian seasoning, cover and simmer gently for just a few minutes.
Fastest dinner ever (but it’s delicious).
