My mom’s lasagna

This is requested frequently for family get togethers. Mom made great lasagna and the kids loved it growing up.

Brown a pound or two of ground beef or ground turkey with diced onion and top with two large jars of spaghetti sauce (I found a good sugar free variety at Costco but just your favorite). Let the sauce simmer on low for a few minutes.

Meanwhile cook 1 package of lasagna noodles in rapidly boiling water (I add some salt to the water). I’ve also had good results using less noodles – sometimes just exactly 10 which is half a package. I try to cook the noodles al dente. Drain and rinse in cold water.

Mix a large container of cottage cheese with two eggs and beat together. Toss in a generous handful of Parmesan cheese.

Have six cups of grated mozzarella cheese handy.

Here’s a summary of the layers (you won’t need to read all the instructions once you’ve made this once):

  1. 1/4 of the sauce
  2. half of the noodles
  3. cottage cheese mixture
  4. half of the sauce
  5. 3 cups of the cheese
  6. last half of the noodles
  7. last 1/4 of the sauce
  8. 3 cups of the cheese

Bake at 350 degrees for about 30 minutes until hot and bubbly.
