Julia Child burgers

We started cooking our way through one of Julia Child’s cookbooks and that’s where this burger came from.

George added his own twists and now this is our standard burger – served up with buns or by itself with some veggies and Rachel Ray potatoes. If we serve them by themselves, we deglaze the pan with a little chicken broth and/or red wine and add a pat of butter to the sauce at the end.

1 pound of ground beef
half an onion, finely chopped
Black pepper

Mix the onion into the ground beef. Add plenty of freshly ground black pepper and a little salt. Pat the mixture into thin patties. You’ll get about 5 or 6.

Place in a hot heavy skillet over medium heat. Sprinkle a little more salt on each side of the patty as it goes into the pan. Cook for just a few minutes on each side to the desired doneness.
