George saves extra boiled or baked potatoes to make home fries.
Heat a heavy skillet and add a drizzle of good olive oil. Cut the potatoes in a size you like and toss them in the skillet. Season with salt and pepper and just let them sit for a few minutes until they begin to brown and crisp. Turn them over and let them continue to cook.
Meanwhile cut up an onion in about the same size pieces as the potatoes. Toss them in with the potatoes. Stir every few minutes until the onions also brown a bit and are tender.
I wasn’t sure how to categorize these but for now, I’m putting them with vegetables.
