Spiced Pumpkin Cake

Paul went on a road trip with his friend, Mark, and Mark’s mom when we lived at the Sutherland Apartments at the University of Tennessee in Knoxville. He came back with this recipe.


  • 1 18.5 oz. box yellow cake mix without pudding
  • 4 eggs
  • 1 cup canned pumpkin
  • 3/4 cup sugar
  • 1/2 cup vegetable oil
  • 1/4 cup water
  • 1 teaspoon ground cinnamon
  • dash of ground nutmeg

Combine first 8 ingredients in a large mixing bowl. Beat 2 minutes on medium speed. pour in greased and floured 10 inch bundt or angel food cake pan. Bake at 350 for 50 to 55 minutes. Cool on rack.


Mix 1 1/2 cups sifted confectioner’s sugar with just enough milk so it will drizzle over the cake.
